Tomato Recipes for Summer’s Harvest

I love tomatoes.  This is the perfect time of year to enjoy everything the garden has to offer and it seems that tomatoes are always the crop that we have so much of.  I really don’t think there can be too many tomatoes. Just not enough recipes, so today I wanted to share some of the amazing recipes I have come across while searching for new ways to serve tomatoes.

These roasted stuffed heirloom tomatoes not only taste delicious, but look so appealing, too.   I love that Gina used the different colored heirloom tomatoes, the colors just add to the appeal.

Salsas are a wonderful way to use your bounty of tomatoes.  This one used some yellow heirlooms, but red vine tomatoes or cherry tomatoes would work just as easily.  Peaches are ripening at this time of year, too, so they are a perfect partner in this salsa.

Sweet cherry tomatoes and caramelized onions bubble under cheesy cornmeal biscuits. Serve with a crisp lettuce salad for a meat-free harvest supper.

Janette used small heirloom, dark Kumato and medium vine tomatoes to create this herbed tomato galette which could be a meatless weeknight dinner, or served up as a side dish for an elegant party.

One of my favorite side dishes are my easy stuffed baked tomatoes.  These are easy to prepare, can be prepped ahead of time and of course, they add color to your dinner plate.

Heidi over at FoodieCrush wasn’t having success with her heirloom tomato plants, so she created these heirloom tomato frico cups with the yummy little heirlooms she found at Whole Foods, proving, you don’t have to have a green thumb to have amazing tomatoes for the kitchen.

Gazpacho is one of my all time favorite ways to consume tomatoes, or actually, one of my favorite ways to consume vegetables.  I could eat salsa and just pretend it was gazpacho, I love my tomatoes so much.  This is a really interesting twist on gazpacho, a creamy Caesar gazpacho, so if you are looking to mix up your gazpacho recipe, perhaps you will want to head over to Babble and try this one.
