Chloe’s Inspiration ~ Celebrate Peanut Butter Lovers Month

November is Peanut Butter Lovers Month, time to celebrate! Americans will celebrate by eating more than 65 million pounds of peanut butter during the month of November.

Southern Peanut Growers, representing southeastern peanut farmers, started the celebration as Peanut Butter Lovers Day on November 4, 1990. November 4 marks the anniversary of the first patent for peanut butter, applied for by Dr. John Harvey Kellogg on November 4, 1895. It grew to a month-long celebration in 1995 when peanut butter celebrated its 100th birthday!

Here are a couple of recipes you might want to try to use to celebrate National Peanut Butter Lover’s Month!

Peanut Butter Fudge

Peanut Butter Fudge

1 cup creamy peanut butter
1 cup (2 sticks) unsalted butter, cut into small pieces
2 teaspoons vanilla extract
3 cups powdered sugar
1/2 cup Fisher Chef’s Naturals Raw Peanuts, toasted and coarsely chopped
1/3 cup semi-sweet chocolate chips

Grease 9 x 5-inch loaf pan with butter. Line pan with parchment paper allowing extra to overlap sides. Place peanut butter and butter in microwave-safe bowl. Microwave on HIGH 1 to 1 1/2 minutes until mixture begins to bubble. Stir peanut butter mixture. Microwave on HIGH 1 1/2 minutes. (Take precaution as mixture may bubble up sides.) Stir in vanilla extract. Add powdered sugar, stir until thickened and well blended. Spread mixture evenly into prepared pan. Sprinkle toasted peanuts over top; gently press into surface. Cover and refrigerate 1 hour or until set. Use edges of parchment paper to lift fudge from pan. Cut into squares. Place chocolate in microwave-safe bowl. Microwave on HIGH 1 to 1 1/2 minutes; stir every 30 seconds until melted. Transfer to small plastic resealable bag; secure top. Snip tip from one end of bag. Gently squeeze bag; drizzle chocolate over top. Allow chocolate to set; serve.

Yield: 24 squares

peanute butter cookies

1 cup butter
1 cup peanut butter
1 cup white sugar
1 cup brown sugar
3 eggs
2 cups flour
1 tsp baking soda
1 6 ox package of chocolate chip pieces (optional)
1/2 cup chopped roasted peanuts
Cream butter and sugars, add eggs, one at a time. Combine dry ingredients, add flour mixture bit by bit. Stir in Peanuts and Chocolate Chips if you are using.
Drop by teaspoon onto parchment paper on cookie sheet and flatten with glass or back of spoon or fork to get the trademark slashes of a peanut butter cookie.
