Pom Berry Bellini

BLOODY GOOD POM BERRY BELLINI

Makes six to eight drinks.

Ingredients:
1/3 cup pomegranate juice
1/2 cup all-natural blueberry jam
1 bottle non-alcoholic champagne or sparkling cider, chilled
Fresh blueberries for garnish, optional

Directions:
Heat the pomegranate juice in a small saucepan until hot but not boiling. Add the jam and whisk until smooth. Remove from heat and transfer to a fine mesh strainer set over a pitcher. Using a rubber spatula or spoon, press the mixture to extract the liquid, leaving any solids or seeds behind; let syrup stand until completely cooled. Refrigerate until ready to use.

To serve, pour two to three teaspoons of the syrup into champagne flutes and top with champagne or sparkling cider. Float a few blueberries in each drink for garnish, if desired. Serve immediately.

MONSTERMASH SMOOTHIE

Fresh Blueberries and/or Blackberries 2/3 a small package…actually 1/3 of each kind)
Fresh Strawberries (I used 10)
2 1/4 cups Fresh Orange Juice (I used simply orange brand)
2 scoops Frozen Vanilla Yogurt OR Ice and regular vanilla yogurt

Using a blender or food processor mix up your strawberries and a splash of orange juice. Poor into a bowl or large cup and set aside. Now throw your blueberries and/or your blackberries right into the same container you blended your strawberries in. When you are done pureeing your berries pour your blackberry mixture right down into the bottom of your glasses. Next layer on your strawberry puree with a spoon into your glasses right on top of you blackberry mixture. Clean your blender and add 2 1/4 cups of orange juice and 2 scoops of frozen yogurt (or the alternative) and blend until smooth and thick. May need to add additional yogurt to thicken up if need, or a few ice cubes. Spoon this mixture right on top of your berry mixture in your glasses to give it a layered and marbled look.

Red Zombie Eye Punch ond other halloween party beverage recipes

RED ZOMBIE EYE PUNCH

 Ingredients:

2 1/2 cups ginger ale
10 cups cherry cola
5 cups fruity red juice mix
3 1/3 cups pineapple juice
maraschino cherries (about a large jars worth)
semi-sweet chocolate morsels
Prep your cherries first. Simply pull out the stems and insert the chocolate morsels point side first into the hole it leaves. You’ll have to secure these a bit by pushing in gently enough to avoid breaking the cherry, but firmly enough to make sure the chocolate stays put.
We noticed that the chocolate eventually falls out of the cherries, so we opted to assemble the cherries and keep them off to the side to use as a garnish.
Don’t be afraid to throw all of the ones you make directly into your punch bowl though – it’s definitely not a big deal if the chips fall out. They may not resemble eyeballs in the same way, but the punch will taste fantastic!
Next, just pour all the other liquid ingredients together into your punch bowl.
