My May Flowers Cake

April showers bring May flowers is the saying, and I made this cake to share with friends at a lovely luncheon.  I am no pro cake decorator, but I thought that covering the top of a cake with royal icing flowers would communicate the Spring feeling I wanted to bring to the table.

I just couldn’t believe how sweet this cake is.  I baked it in a Wilton cake pan designed for baking an oversized cupcake.  I have had this cake pan for a while and noticed that most of the ones in the stores now are much larger.  I am glad I have this small one, it makes a perfect little cake when you are having a few girlfriends over for a luncheon.

I set my cupcake cake together on a pretty cake plate.  I frosted it with mint green frosting with simple squiggles up and down the sides.

May-Flowers-Cake2I knew I was putting the royal icing flowers all over the top, so I just squeezed the rest of the frosting over the top.  I added the flowers and there was my little bouquet of flowers cake.

May-Flowers-Cake4I just couldn’t be much more pleased with with my little bouquet of flowers cake.  I look forward to trying some more creative ways to use my cupcake pan.
