In the summertime I love to grill out, especially when you can prepare the whole meal on the grill and don’t need to heat up the kitchen. No matter what preparation I need to do for the food to go on the grill, it always seems like meals done on the grill make my kitchen stay cleaner too! My family always loved ranch potatoes, but when I started adding onions, they loved them even more!
- 14 Small Redskin Potatoes (washed and quartered)
- 2 Medium Onions (chopped into large pieces)
- ½ Cup of Olive Oil
- 1 Packet of Hidden Valley Ranch Dressing Mix (dry mix)
- Combine all of the ingredients in a large bowl or zip top bag and stir or shake well so that all of the pieces of potatoes and onions are coated with the oil and ranch seasoning. Put a grill mat on your grill over low heat and place the potatoes and onions on the grill mat. Grill approximately one hour on low heat or until the potatoes are easily forked. Serve hot and enjoy!

I served these up with some strip steaks, but they are just as delicious with chicken or burgers, too! My family wants me to make these again already! I hope you have a chance to enjoy this delicious combination on the grill this summer!
