My favorite stuffing recipe is one I use with turkey for Thanksgiving, but I have also used it with a crown roast of pork.

Sausage and Apple Stuffing Recipe

2 pounds of bulk pork sausage
cup butter
1 large onion chopped
4 apples, peeled, cored and cubed
4 stalks of celery chopped
12 slices of bread torn into small cubes
2 cups of apple cider

 

Brown the sausage in a large pan, making sure you crumble it well as it cooks.
Melt butter in a large pan, add the onion and cook until the onion is soft. Add the cubed apples and chopped celery to the onion. Continue to cook over low heat.
Remove from heat and mix the sausage and the onion mixture in a large bowl. Add in the cubed bread, mixing well. At this point you can put this in a 9 x 13 pan and refrigerate until you are ready to cook. (I prepare to this point the day before, so it is ready to put in the oven on Thanksgiving.
Add the apple cider and bake for 45 minutes at 325 degrees.

You can alternately use this to stuff a turkey or a crown roast of pork.
