A Super Recipe for a Super Football Game Party!

I don’t create a lot of recipes, but I am so excited to share a delicious recipe for your Super Football party!  I don’t know who wouldn’t love Mashed Potato Bites!  Don’t those sound scrumptious?  These will just be one of the treats I will be serving!  You might want to make a double batch of these, they will go fast!Super Bowl Party Time

My SNACK ZONE will be a generous spread of all kinds of yummy fan favorites, including my mashed potato bites!  I know that no one wants to leave sight of the game, or the entertaining commercials, so I will offer up individual servings so they can be very easy grab and go treats.

For a little healthier option, cups with some cucumber dill dip have skewers of cherry tomatoes and cucumber slices, celery and carrot sticks.

Mashed potato bites

Ingredients:
One 24 ounce container of Bob Evans Sour Cream & Chives mashed potatoes (or 2 1/2 Cups of any mashed potatoes)
1/4 cup chopped green onions
1 egg slightly beaten
1 teaspoon fresh ground pepper
1/4 cup bacon bits
1/2 cup grated cheddar cheese
1 1/2 cups of panko bread crumbs
Oil for fryingMashed potato bites recipe

Directions:

Bring the potatoes to room temperature and then mix all of these ingredients except for the bread crumbs and oil together.   Using your hands, roll balls approximately walnut size out of the potato mixture.  Roll each ball in the panko bread crumbs and set aside to rest at least 15 minutes.  After 15 minutes, begin frying the potato bites in 375 degree oil for about 1 to 2 minutes.  Drain the bites on a paper towel and serve at room temperature.  This will make approximately 50 potato bites.  Super Bowl Party Time!
