Nutmeg Log Cookies

I like to add these cookies to my cookie platter as they add a different shape and taste.  I loved these as child.  My mother would make these every Christmas.  I had almost forgotten them, until I was going through my recipe box this Fall.  I hope you try them out and enjoy them as much as I do.

Nutmeg Log Cookies

Nutmeg Logs

1 C. butter (at room temperature)
2 t. vanilla
2 t. rum flavoring
¾ C. sugar
1 egg
3 C. flour
1 t. nutmeg
¼ t. salt

Preheat your oven to 350 degrees. Cream together the first three ingredients. Blend the sugar into the butter mixture, and then add the egg, creaming together well. Sift the flour, nutmeg and salt together and then gradually add to the butter mixture. When your dough is thoroughly mixed together, shape it into long rolls, ½” in diameter. Cut into 3” lengths and put on a parchment paper-lined cookie sheet. Bake at 350 degrees for 12 – 15 minutes. Cool completely before frosting.

Frosting:

⅓ C. butter
1 t. vanilla
2 t. rum flavoring
2 C. sifted confectioners sugar
3 T. light cream

Cream the butter with the vanilla and rum flavoring. Add 2 C sifted confectioners sugar and 3 T light cream and beat until smooth and creamy. Spread frosting onto each log, then using the tines of a fork, rake it through the frosting so that it appears like tree bark and sprinkle with a little bit of nutmeg.
